    I make a lot of soups! I fact, I am a bit of a soup-specialist. I tried this recipe because (1) I trust Joan, (2) I trust Jessica and (3) I have a vegan friend who needed a soup fix. We loved it! My husband (Ned) also loved it. Yes, the mint makes it (to quote Joan “such an underrated herb!”) I also sent the link to my “foodie friend” in the Bay Area. Per her suggestion, I added a dash of nutmeg. WOW!
