(adapted from Herbs, by Rosalind Creasy and Carole Saville)
This is lovely rose-colored lemonade, perfumed with a hint of scent of French lavender, fresh from the garden.

  • Lavender infusion:
  • 2½ cups water
  • 1½ cups sugar
  • ¼ cup fresh lavender leaves, coarsely chopped
  • Lemonade:
  • 2½ cups water
  • 1 cup strained freshly squeezed lemon juice
  • ½ cup to 1 cup sugar, to taste
  • ice cubes
  • 6 to 8 sprigs of fresh lavender, for garnish
Instructions
  1. To make the lavender infusion:
  2. combine the water and sugar in a medium saucepan. Bring the water to boil, stirring to dissolve the sugar. Add the lavender and remove from the heat. Cover and let the infusion cool to room temperature. Strain and discard the lavender.
  3. To make the lemonade:
  4. Pour the infusion into a glass pitcher, a half cup at a time, adjusting for taste as you add the water and lemon juice. Stir well and refrigerate until chilled. Just before serving, stir the lemonade again and fill the pitcher with the ice. Pour into chilled glasses and garnish each serving with a sprig of lavender.
