attack of the killer tomatoes – day two

As our friend Chris pointed out, there is no comparison between a tomato you buy at the store and one you pick from your garden or find at a market.   It’s so great to see local markets popping up everywhere so if you can’t grow your own, you have a wonderful alternative. This grower is from the Ebby Organic Farm in Goleta, especially known for  their amazing heirloom tomatoes.  Not only will your local vendors give you taste samples, but they will give you an education on the varieties available and even some unusual ideas for how to serve them.

Here’s a recipe Joan discovered in Diane Worthington’s wonderful cookbook, The Taste of Summer.  This fresh, fruity, minty salsa tastes great any time of year, but particularly in the summer when tomatoes, jalapenos, and mint abound.  Serve with grilled fish or chicken or as a side to liven up a burrito or taco.

Tomato Papaya Mint Salsa

2 large tomatoes (about 1 pound), peeled, seeded, and diced
1 cup peeled, seeded, and diced ripe *papaya (about ½)
1 jalapeno chile, seeded and finely chopped
1 shallot, finely chopped
3 tablespoons mint, finely chopped
2 tablespoons fresh lime juice
½ teaspoon salt

Combine all the ingredients in a medium mixing bowl and mix well.  Refrigerate covered until ready to serve.
Advanced Preparation:  This salsa may be prepared in the morning and refrigerated until ready to serve.
*can substitute mango for papaya
