Southern Cornbread

Be honest, isn't everything better with bacon? :) Next month, we diet. By the way, notice that this recipe does not call for sugar...Christy says her family reminded her that the true southern version of cornbread is savory, grainy, and crumbly. (See recipe below). This one makes a LOT of cornbread!
Ingredients
  • ⅔ cup oil or bacon drippings
  • 2 eggs
  • 2½ cups buttermilk or whole milk
  • 2 cups corn meal
  • 2 cups flour
  • 2 tablespoons baking powder
  • 3 teaspoons soda
  • 1 teaspoon salt
Instructions
  1. Put oil in bowl.
  2. Add eggs and beat until foamy.
  3. Add milk.
  4. Sift in dry ingredients.
  5. Put in greased pan or 13 x 9" pyrex baking dish and bake at 475 degrees for 20 minutes.
