New Years Collard Greens

Christy says this is a Brazilian recipe she learned many years ago and it has become part of her New Years Day menu. The amounts are up to you!.
Ingredients
  • Collard greens, rinsed twice then drained.
  • Bacon, cooked in a cast iron pan, then chopped
Instructions
  1. Before chopping the collard greens, remove the center vein; it will make the leaves more flexible.
  2. Roll the greens and slice them into ribbons.
  3. Saute them with bacon in the well-coated pan until wilted.
