Easy Peasy Banana Muffins

Ingredients
  • 1 very ripe banana, mashed
  • 1 egg, slightly beaten
  • ½ heaping cup nut butter (Diane uses almond)
  • 1 tablespoon vanilla
  • 3 tablespoons maple syrup (or honey or agave)
  • ½ cup milk chocolate chips
  • ¼ teaspoon baking soda
  • Pinch of salt
Instructions
  1. Preheat oven to 400F degrees.
  2. Line muffin tin with paper liners or use cooking spray to coat the tin.
  3. Put all ingredients in a blender and mix well.
  4. Add ½ cup chocolate chips and stir by hand.
  5. Bake for about 15 minutes or until toothpick inserted in middle comes out clean. Be careful to not overbake or the muffins will be dry.
